Khaman Dhokla is a light, fluffy, and savory steamed cake made from gram flour (besan), popular in Gujarati cuisine. Step 1

In a mixing bowl, combine gram flour, semolina, curd, turmeric, sugar, lemon juice, salt, and water. Mix into a smooth batter.

Step 2

Let the batter rest for 10 minutes.

Step 3

Meanwhile, grease a steaming tray or thali and set water to boil in a steamer.

Step 4

Add Eno fruit salt to the batter just before steaming. Mix gently – the batter will rise.

Step 5

Pour into the tray and steam for 15–20 minutes or until a knife comes out clean.

Step 6

Heat oil in a pan, add mustard seeds, green chilies, curry leaves, and asafoetida. Add water, sugar, and lemon juice; simmer briefly.
